Fluffy banana pancakes that are perfect for breakfast or brunch. No boxed mix is required!
Ingredients:
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 ripe banana, mashed
1 egg
¾ cup milk
2 tbsp unsalted butter, melted
1 tsp vanilla extract
Instructions:
Mix the dry ingredients:In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Combine the wet ingredients:In another bowl, mash the banana. Add the egg, milk, melted butter, and vanilla extract. Whisk until smooth.
Make the batter:Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix—a few lumps are okay.
Cook the pancakes:Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes, then flip and cook for another 2 minutes.
Serve:Stack the pancakes and serve with syrup, fresh fruit, or a dollop of whipped cream.
