A comforting pasta dish with a creamy tomato basil sauce that’s ready in under 30 minutes.
Ingredients:
300g (10 oz) pasta (penne or spaghetti)
2 tbsp olive oil
3 garlic cloves, minced
1 can (14 oz) crushed tomatoes
½ cup heavy cream
½ cup grated Parmesan cheese
1 tsp dried basil (or ¼ cup fresh basil, chopped)
½ tsp salt
¼ tsp red pepper flakes (optional)
Instructions:
Cook the pasta:Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Drain and set aside, reserving ½ cup of pasta water.
Prepare the sauce:In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
Add the tomatoes:Pour in the crushed tomatoes and stir. Season with salt and red pepper flakes, if using. Simmer for 5 minutes.
Make it creamy:Lower the heat and stir in the heavy cream. Cook for 2 minutes, then add the Parmesan cheese and dried basil. Stir until smooth and creamy.
Combine with pasta:Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add a splash of reserved pasta water.
Serve:Garnish with fresh basil, extra Parmesan, and enjoy!
