Strawberry Spinach Salad with Poppy Seed Dressing

Ingredients (Serves 4)

  • 6 cups fresh spinach leaves, washed and dried
  • 1 cup fresh strawberries, sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup crumbled feta cheese (optional)
  • ¼ cup sliced almonds, lightly toasted


Poppy Seed Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon poppy seeds
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper


Directions

  1. Combine dressing: In a small bowl or a jar with a tight-fitting lid, whisk (or shake) the olive oil, white wine vinegar, honey, poppy seeds, salt, and pepper until well combined.
  2. Assemble salad base: Place the spinach leaves in a large salad bowl. Top with the sliced strawberries, red onion, feta cheese, and toasted almonds.
  3. Dress & toss: Drizzle the poppy seed dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
  4. Serve fresh: Enjoy immediately for the best texture and flavour.
