How to Cook the Perfect Steak Every Time

There’s something deeply satisfying about cooking a steak to perfection. Whether you’re grilling, pan-searing, or using the oven, getting that ideal sear on the outside with a juicy, tender inside can seem like a challenge. Fortunately, with a few key techniques, you can cook the perfect steak every time.


1. Choose the Right Cut
The first step to a perfect steak is choosing the right cut of meat. Ribeye, New York strip, and filet mignon are all excellent choices, each with its own unique texture and flavour. Ribeye is known for its marbling and rich flavor, while filet mignon is leaner but extremely tender. Make sure the steak is at least 1 to 1.5 inches thick to ensure it cooks evenly.


2. Bring the Steak to Room Temperature
Before you start cooking, allow your steak to come to room temperature by letting it sit out for about 30 minutes. This ensures even cooking and helps prevent the steak from being cold in the middle when the outside is done. Pat it dry with paper towels to remove excess moisture, which will help create a better sear.


3. Season Generously
Don’t be shy when it comes to seasoning your steak. A generous amount of salt and freshly ground black pepper is often all you need. Season both sides of the steak just before cooking, and feel free to add herbs like rosemary or thyme to infuse extra flavour as it cooks.


4. Get the Perfect Sear
For the best sear, make sure your pan or grill is hot—really hot. Heat your skillet over medium-high heat and add a small amount of oil with a high smoke point, like canola or grapeseed oil. When the oil starts shimmering, place the steak in the pan. Don’t move it around—let it cook undisturbed for 3-4 minutes per side to develop a golden-brown crust.


5. Cook to Your Desired Doneness
Use a meat thermometer to ensure your steak reaches the right internal temperature. For rare, aim for 120-125°F, for medium-rare, 130-135°F, and for medium, 140-145°F. If you prefer your steak more well-done, cook it to 150-160°F. Let the steak rest for 5 minutes after cooking to allow the juices to redistribute.


6. Finish with Butter and Herbs
For an extra touch of richness, add a knob of butter and some fresh herbs like rosemary or thyme to the pan during the last minute of cooking. Baste the steak with the melted butter for added flavour and shine.


With these simple techniques, you can consistently cook a steak that’s perfectly seared on the outside and tender on the inside. Whether you’re cooking for yourself or impressing guests, mastering the art of steak will always be worth the effort.
